		<description>One more week. Hooray!&lt;br /&gt;&lt;br /&gt;Fish. Hmmm. I buy tilapia. It&#039;s very mild and really easy to cook. I simply rub a little butter, salt and pepper on it and broil it for a few minutes on each side. It&#039;s my favorite fish except for catfish which is impossible to get here in Colorado. (You can get it here but it&#039;s not good - the cooks don&#039;t know what they&#039;re doing.)&lt;br /&gt;&lt;br /&gt;One more week - yippee!</description>

One very simple way is to put a filet of fish in a foil packet with a bit of olive oil and some veggies of your choice (I often do green peppers, onion slices, carrots, zucchini, etc). Bake at 425 for 15-20 min until the fish is flaky. Serve with rice if you&#039;d like. Super easy, and no cleanup! Squeeze some lemon on top along with some salt and pepper.</description>
